Don't assume it's squid ink just because it's black; this one is made with three types of soy sauce and a special dashi. The owner even gave us a soup that's 50% weaker than the original, because the real deal is incredibly strong. The broth is like taking a big bag of salt and digging your entire face into it, igniting your taste buds. It was developed right after the war in 1946 for people who ate ramen with bento, so the strong flavor would pair well with rice. I'd rate it about an eight out of ten; if I lived in Toyama City, I'd probably eat this once every month or two. The salt content is worrying, but the flavor is very rich.
