When I first came to Yakushima, the guesthouse owner took me to a beautiful, clear river. I wanted to understand why the Miyanoura River was so pristine, which led me to become a mountain guide. Walking through nature, I realized the incredible connection between Yakushima's mountains, rivers, and sea. It's not just the river that's beautiful, but the entire ecosystem that connects them. I wanted to create a place where people could feel this connection, and I found it here.

I've been involved in the work of extracting buried Yakusugi wood from the forest for 12 years. Initially, it was for livelihood, a choice to work in the forest. I didn't have a strong attachment to the forest or the 1000-year history of Yakusugi. However, seeing the forest from a new perspective, I began to appreciate its existence and value. I used to cut wood, burn it for charcoal, and make a living. Now, I believe in planting new cedars for future generations and utilizing the island's resources wisely.

I used to be a guide, not a chef. For me, the richness of this island means being able to eat what's available seasonally. I want to convey what foods and plants are found on this island, as that's the main reason people travel here. I cook as if I'm still a guide, sharing the island's bounty through food.
