When you arrive at Ichiran, you place your order on a machine before you're seated. I went for the classic tonkotsu ramen set that comes with a boiled egg and extra sliced pork, plus a draft beer. Once you have your tickets, you'll be given an order sheet to circle your preferences for the ramen, like dashi, richness, garlic, green onion, chashu, red sauce, and noodle texture. Make sure you're speedy doing this as the chefs swipe it from you in no time! The service is super quick once you're seated.
