First off, you have to hit the slopes! Niseko is a ski town, so skiing or snowboarding is the obvious choice. If you're not a big skier, snowmobiling is a really fun winter option instead. I'd make sure to grab lunch at a Japanese ski lodge, specifically at The Edge, because the food selection is so much better than in the US.

After a morning on the slopes, you absolutely need to relax at an onsen. Unfortunately, I have no content here because everyone strips down and goes into the natural hot bath, so for obvious reasons, no phones are allowed. It's the perfect way to unwind and soothe tired muscles.

After getting fully ready for the evening, head right into town for some shopping, followed by drinks at Bar Gyu+. You enter through a fridge door for some great cocktails and honestly, a major vibe. It's a unique and memorable spot for evening drinks.

I'd end the night at Kobe Tei. Come hungry! You'll get courses of Kobe beef served yakiniku style. It's absolutely delicious and a fantastic way to experience high-quality Japanese beef. The experience of grilling it yourself at the table is part of the fun.
