The originator of Morioka Jajamen, a local noodle dish adapted from Chinese zhajiangmian. This small but charming restaurant has been open since 1953 and is a local favorite, showcasing signatures from famous visitors. It's located near the former site of Morioka Castle, about a 25-minute walk from Morioka Station. Open Monday–Saturday from 9:00 AM to 9:00 PM and Sundays from 11:30 AM to 6:45 PM.

- Morioka Jajamen Noodles · ¥510 — A flat udon-like noodle dish served with a special meat miso sauce, cucumbers, and green onions. You can customize it to your taste with optional condiments like ginger, vinegar, and Chinese chili oil. Mix everything well before eating. This is a very flavorful dish with a distinct chewy texture, and the creator's favorite in Morioka.
- Chitan Soup · ¥50 — The perfect way to end your Jajamen meal. Just before you finish most of your noodles, crack an egg into your bowl, mix it, and ask the staff for "Chitan please." The chef will then take your bowl, fill it up with hot water, and add additional toppings, transforming it into a savory soup.
